Our friends at Unidine, the food service company here at FBH, have a great new recipe to share with us this month!
As part of a recent “Stop Food Waste Day,” Unidine shared with us this recipe that makes use of leftovers to create a delicious, fast, and easy snack or meal.
VEGGIE PESTO
- 4 cups cooked leftover veggies (asparagus, broccoli, etc.)
- 4 tablespoons vegetable oil
- 1 ounce nuts or seeds (walnuts, sunflower seeds)
- 2 garlic cloves, peeled
- ½ cup shredded hard cheese (Parmesan or Romano)
- Salt and pepper to taste
In a food processor, add all of the ingredients except the oil and blend thoroughly.
Stream the oil in slowly; add salt and pepper to taste.
Serve over pasta, as a dip for veggies and crackers, etc.
